Polenta Muffins

Get the kids in the kitchen to make perfect muffins in just a few easy steps!

Makes 12

Ingredients: ½ cup Sostanza Polenta 1½ cups self raising flour ¼ cup sugar 1 egg ½ tspn salt 1 cup milk 1/3 cup oil

1 punnet blueberries

Method: Sift flour and salt into a bowl. Add Sostanza Polenta and sugar. Mix. In a separate bowl, combine egg, oil and milk and pour into the centre of the dry ingredients. Gently fold ingredients until combined, making sure not to overmix. Stir through blueberries. Spoon mixture into Muffin tray. Bake in moderate oven for approximately 20 minutes.
